Full of delicious summer vegetables combined with sausage and potatoes, this is a hearty main dish or an easy meal. Try using fresh tomatoes and Italian herbs if you have them on hand.

Ingredients

  • 16 ounces sausage (1 pound, ground)
  • 1 onion (small, diced)
  • 3 zucchini (small, diced)
  • 3 squash (small, yellow, diced)
  • 3 potatoes (medium, peeled and diced)
  • 1 can tomatoes, low-sodium (Italian stewed, cut up)

Directions

  1. Wash hands with soap and water.
  2. Brown sausage and onion together in a skillet; drain. Mix all ingredients together and place in a casserole dish.
  3. Cover with foil and bake at 350 degrees for 45 minutes.

Notes

Instead of using the Italian stewed tomatoes, you could use fresh diced tomatoes with some Italian spices added.

If I make this again, I will pre-cook the vegetables, particularly the potatoes, before putting together for the oven-- as the vegetables were not cooked enough in 45 minutes. Also, I had to drain off quite a lot of the liquid after cooking in the oven. To add a little more flavor, I added (about 1/4 cup) low fat mozzarella cheese.

This is ok. Nothing holds it together so it's not a typical casserole consistency, it's just loose veggies with meat. Simple way to get lots of veggies with some flavor from the sausage.
