This one made some converts to bell peppers! It's a great one to make ahead, too.
When we made this recipe, we substituted a mixture of black beans, rice, tomatoes, onions, and green peppers flavored with chili powder and garlic powder for the stuffing. We called it "Vegetarian Stuffed Green Peppers."
I have always enjoyed this recipe. The recipe is very simple and very tasty. My husband loves them.
