Make your own granola bars at home. This recipe combines raisins, carrots, oats, and honey for a healthy snack or breakfast on-the-go.

Ingredients

  • 1 cup honey
  • 1 cup peanut butter
  • 3 1/2 cups rolled oats
  • 1/2 cup raisins
  • 1/2 cup carrot (grated)
  • 1/2 cup coconut

Directions

  1. Wash hands with soap and water.
  2. Preheat oven to 350 °F.
  3. Peel and grate the carrots.
  4. Put the honey and peanut butter in a large saucepan. Cook on low heat until they melt.
  5. Remove the pan from the heat. Turn off the burner.
  6. Add oatmeal, raisins, carrots, and coconut to the saucepan. Stir well, and let it cool until you can safely touch it with your hands.
  7. Put the mix into a 9x13 inch baking pan.
  8. Press the mix firmly into the bottom of the pan.
  9. Bake for 25 minutes.
  10. Cut into 24 bars.

The bars are rather basic, with only a mild flavor. A great base to build on if you want to make a more flavorful version. Can't beat the price per bar though.

Is this supposed to make and 8x8, a 9x9, an 8x12, a 9x13 pan? Jelly Roll Pan? I'm presuming the pan must be greased or sprayed to prevent sticking.

I tested this recipe with some friends who were wanting me to make them granola bars. It was very easy to follow (the recipe is accurate) and tasted good. My only other comment is that the bars are very peanutty...this is not a problem in my book, I quite liked it, just don't be expecting Nature Valley granola bars.
