Ingredientes

  • 1/2 taza maíz (elote) cocidos frescos o congelados
  • 1 lata frijoles negros, bajo en sodio, drenados y remojados (15 onzas)
  • 1 taza tomates frescos picados
  • 1/2 taza cebolla picada
  • 1/2 taza pimiento verde picado
  • 2 cucharadas jugo de lima
  • 2 ajo fínamente picado
  • 1/2 taza salsa picante

Preparación

  1. Lávese las manos con agua y jabón.
  2. Combine todos los ingredientes en un recipiente grande y hondo. Refrigere hasta que lo vaya a servir.
  3. Drene antes de servir.
  4. Sirva con tostadas de maíz bajas en grasa o verduras frescas.


Notas: Esta salsa utiliza verduras frescas que se consiguen a lo largo de todo del año y le dan sabor y color. Tanto niños como adultos son aficionados de este platillos. Si tiene un rallador o tajadera manual, este puede ser algo fácil para que los niños hagan.

Consejo para su seguridad: Al cortar el maíz (o elote) del tallo u olote, es necesaria la supervisión de un adulto.

Amazing salsa!! I served it with baked tortilla chips and everyone loved it. Will certainly make again in the summer!

I used this recipe with low-income seniors in subsidized housing. They thought it was something they could do on their own and are willing to make for themselves. I did not have time to dice ingredients so I used canned ingredients with no added salt (dice tomatoes w/ onion, green pepper, basil, and oregano) and it was a hit! They participate in the brown bag program and that day they received canned beans, which was perfect timing!
