"After a long commute to and from work, it’s hard to get motivated to cook during the week. So I try to cook a few meals and some staple grains on the weekend so I can easily just reheat the leftovers for meals throughout the week. Sometimes I will make a chili in the crock pot and a few cups of quinoa. The chili is great for lunches and dinners through the week – just add a veggie and it’s a complete meal. For the quinoa, I add some into a variety of dishes (like salads, soups, or even my chili) for a nutrient and fiber boost. I also have it for breakfast mixed with walnuts and whatever fruit I have on hand.
